We went to Sausage Link early in the morning to check out how the famous local favourite “Boudin” is being made. Boudin is a sausage that includes ingredients of rice, pork, cilantro, onions and other secret recipes.
From a window, we got to see the inside of the preparation room where the workers demonstrated to us on how they put in each ingredients and using casing to prepare Boudin.
After watching the Boudin is being made, we can buy them and taste them on the spot. Another local favourite, the cracklin (cripsy pork skin and fat) are definitely crispy and makes a cracking sound when you bite on it. which is perfect with an ice cold beer.
This is how someone has sums up the experience with cracklin, “a cracklin offers a square of skin that cracks when you bite into it, giving way to a little pocket of hot fat and a salty layer of pork meat.”
